For more than three decades, Bittersweet Bistro has been one of Aptos’s most beloved places to gather. Chef Thomas Vinolus and his wife, Elizabeth, opened the restaurant in 1992 as a dream they’d long shared, and it’s grown into a Santa Cruz County institution that locals consistently rank among the area’s best.
The menu is American bistro cooking with a Mediterranean accent: familiar classics, each given a thoughtful twist. The setting does a lot of the talking, too. Tucked into a stone and stucco building in Rio Del Mar, the bistro has a mahogany bar, cozy booths, crackling fireplaces, and a spacious dining room, plus a heated patio that’s become a favorite for dining outdoors year-round.
Beyond dinner service, Bittersweet hosts private events and community gatherings that spotlight local makers and entrepreneurs.
